Strawberry Rhubarb Pie
Ingredients
- 1 ½ Cups Chopped Rhubarb
- 1 ½ Cups Chopped Strawberries
- ½ Cup Sugar
- 3 tbsp Cornstarch
- ¼ tsp salt
- 1 tsp Vanilla Extract
- 2 tbsp Butter
- 1 Double Crust Pie Shell
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the rhubarb, strawberries, sugar, cornstarch, salt, and vanilla extract. Stir well.1 ½ Cups Chopped Rhubarb, 1 ½ Cups Chopped Strawberries, ½ Cup Sugar, 3 tbsp Cornstarch, ¼ tsp salt, 1 tsp Vanilla Extract
- Pour the mixture into the pie shell and dot with butter.2 tbsp Butter, 1 Double Crust Pie Shell
- Top with the second crust and crimp the edges to seal.
- Cut slits in the top crust to allow steam to escape.
- Bake for 35-40 minutes or until the crust is golden brown and the filling is bubbly.
- Let the pie cool for a few minutes before serving.
