Ingredients

For the Harvest Salad

  • 1 cup amaranth seeds
  • 2 cups water or vegetable broth
  • 1 cup roasted butternut squash cubed
  • 1/2 cup dried cranberries
  • 1/2 cup toasted pecans
  • 1/2 cup crumbled feta cheese
  • 2 cups baby spinach or mixed greens
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped

For the Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  • Cook the Amaranth. Rinse the amaranth seeds under cold water. In a medium saucepan, combine 1 cup amaranth seeds with 2 cups water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the liquid is absorbed and the amaranth is tender. Remove from heat and let it sit covered for 5 minutes. Fluff the amaranth with a fork and let it cool.
  • Prepare the Salad Ingredients. While the amaranth is cooking, roast the butternut squash. Preheat the oven to 400°F (200°C). Toss the squash cubes with a little olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized. Toast the pecans in a dry skillet over medium heat for 3-4 minutes, or until fragrant. Set it aside.
  • Make the Dressing. In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until well combined.
  • Assemble the Salad. In a large bowl, combine the cooked amaranth, roasted butternut squash, dried cranberries, toasted pecans, crumbled feta cheese, baby spinach, red onion, and fresh parsley. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
