Ingredients

  • 4 tbsp unsalted butter for comfort
  • 1 onion chopped (for purification)
  • 2 carrots peeled and diced (for grounding)

  • 4 large potatoes peeled and diced (for grounding)
  • 4 cups vegetable or chicken broth for nurturing

  • 2 cups sharp cheddar cheese shredded (for richness and grounding)
  • 1 cup milk for nurturing
  • 1/2 cup heavy cream for comfort

Instructions

  • In a large pot, melt the butter over medium heat. Add the chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables are softened and aromatic.
  • Add the diced potatoes, vegetable or chicken broth, bay leaf, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the potatoes are tender.
  • Remove the bay leaf from the pot. Using an immersion blender, puree the soup until smooth. Alternatively, for a chunkier soup, break up some of the potatoes with a spoon instead of pureeing.
  • Stir in the shredded cheddar cheese until melted and smooth.
  • Add the milk and heavy cream to the pot, stirring to combine. Adjust the seasoning with salt and black pepper to taste.
  • Simmer the soup for an additional 5-10 minutes, allowing the flavors to meld.
  • Serve the Potato and Cheddar Cheese Soup hot, garnished with chopped chives or green onions.
