Ingredients
- 2 lbs beef stew meat cubed

- 2 cups baby potatoes halved
- 1 cup celery chopped
- 4 cups beef broth
- 1 cup red wine optional
- 1 can 14 oz diced tomatoes
- 1 tablespoon tomato paste
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Sear the Beef: In a large pot, heat olive oil over medium-high heat. Sear the beef cubes until browned on all sides. Remove the beef and set aside.
- Sauté Aromatics: In the same pot, sauté the chopped onion and minced garlic until softened. Add a splash of red wine to deglaze the pot.
- Build the Stew: Return the seared beef to the pot. Add carrots, parsnips, baby potatoes, and celery. Pour in beef broth, red wine (if using), diced tomatoes, tomato paste, bay leaves, thyme, rosemary, salt, and pepper.
