Recipe – Yuletide Hearth Stew
- 1 lb beef stew meat cubed
- 4 cups beef broth
- 1 onion chopped
- 3 cloves garlic minced
- 2 carrots sliced
- 2 parsnips sliced
- 2 potatoes diced
- 1 turnip diced
- 1 cup rutabaga diced
- 1 cup celery chopped
- 1 cup mushrooms sliced
- 1 cup red wine optional
- 2 tbsp tomato paste
- 2 bay leaves
- 1 tsp dried thyme
- Salt and black pepper to taste
- Olive oil for cooking
- In a large pot, heat olive oil over medium-high heat. Add the cubed beef and brown on all sides.
