Instructions

  • In a large pot, combine the vegetable or chicken broth, grated ginger, grated turmeric, minced garlic, chopped onion, sliced carrots, sliced celery, and shiitake mushrooms.
  • Bring the mixture to a simmer over medium heat. Reduce the heat to low, cover, and let it simmer for 20-25 minutes to allow the flavors to meld.
  • While the soup is simmering, prepare the rice noodles according to package instructions. Drain and set aside.
  • In a separate small saucepan, heat olive oil over medium heat. Add thinly sliced garlic and sauté until golden brown. Remove from heat and set aside.
  • Season the soup with salt, black pepper, soy sauce, and rice vinegar, adjusting to taste.
  • To serve, place a portion of cooked rice noodles in each bowl and ladle the hot soup over them.
