Recipe – Caprese Eggplant Hero
Ingredients
- 1 large eggplant sliced into rounds

- Ripe tomatoes sliced

Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Lay the eggplant slices on the prepared baking sheet and sprinkle them with salt. Let them sit for about 15 minutes to draw out excess moisture.
- Rinse the eggplant slices and pat them dry with a paper towel.
- Brush both sides of the eggplant slices with olive oil and arrange them back on the baking sheet.
