Ingredients

  • 1 cup quinoa rinsed
  • 2 cups vegetable broth or water
  • 1 bunch asparagus trimmed and cut into bite-sized pieces
  • 1 cup sugar snap peas trimmed and halved
  • 1 cup cherry tomatoes halved
  • 1/2 cup fresh parsley chopped
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup crumbled feta cheese optional
  • 1/4 cup sliced almonds toasted
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  • Cook the Quinoa: In a medium saucepan, combine the quinoa and vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it cool slightly.
  • Blanch the Vegetables: Bring a pot of water to a boil. Prepare a bowl of ice water. Blanch the asparagus and sugar snap peas in the boiling water for 1-2 minutes, then immediately transfer them to the ice water to stop the cooking process. Drain and pat dry with a clean kitchen towel.
  • Prepare the Salad: In a large mixing bowl, combine the cooked quinoa, blanched asparagus and sugar snap peas, cherry tomatoes, chopped parsley, and chopped mint leaves. Toss gently to combine.
  • Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper until well combined.
  • Assemble the Salad: Pour the dressing over the quinoa and vegetable mixture. Toss until everything is evenly coated with the dressing.
  • Add Optional Ingredients: If using, sprinkle the crumbled feta cheese and toasted sliced almonds over the top of the salad.
