Ingredients

For the Acorn Squash:

  • 2 large acorn squash
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Stuffing:

  • 1 cup wild rice cooked
  • ½ cup dried cranberries
  • ¼ cup chopped walnuts
  • ¼ cup chopped pecans
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • ¼ cup vegetable broth
  • 2 tablespoons maple syrup

Instructions

Prepare the Acorn Squash:

  • Preheat the oven to 400°F (200°C).
  • Cut the acorn squash in half lengthwise and scoop out the seeds.
  • Brush the cut sides with olive oil and season with salt and pepper.
  • Place the squash cut-side down on a baking sheet and roast for 30 minutes.
