Ingredients

  • 1 pound fettuccine pasta for unity
  • 3 tablespoons olive oil for protection
  • 1 pound cremini or white mushrooms sliced (for grounding and protection)
  • 2 leeks cleaned and thinly sliced (for purification and balance)
  • 4 cloves garlic minced (for protection)
  • 1 cup dry white wine for clarity and transformation
  • 2 cups vegetable broth for nurturing
  • 1 cup heavy cream for comfort
  • Zest and juice of 1 lemon for clarity and vitality
  • Salt and black pepper to taste for balance
  • 1/4 cup fresh dill or tarragon chopped (for protection and transformation)
  • Grated Parmesan cheese for serving for wisdom

Instructions

  • In a large pot or deep skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté until they release their moisture and turn golden brown. Remove half of the mushrooms and set them aside for later use as a garnish.
  • To the pot, add the sliced leeks and minced garlic. Sauté until the leeks are soft and aromatic.
  • Pour in the dry white wine, allowing it to simmer for a couple of minutes to reduce slightly.
  • Add the vegetable broth, heavy cream, lemon zest, and lemon juice to the pot. Stir to combine.
  • Break the fettuccine in half and add it to the pot, ensuring it’s submerged in the liquid. Cook over medium heat, stirring occasionally, until the pasta is al dente, and the sauce has thickened.
  • Season the dish with salt and black pepper to taste.
  • Stir in the reserved sautéed mushrooms and fresh dill or tarragon.
