Ingredients

  • 1 lb beef stew meat cubed
  • 4 cups beef broth
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 carrots sliced
  • 2 parsnips sliced
  • 2 potatoes diced
  • 1 turnip diced
  • 1 cup rutabaga diced
  • 1 cup celery chopped
  • 1 cup mushrooms sliced
  • 1 cup red wine optional
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Olive oil for cooking

Instructions

  • In a large pot, heat olive oil over medium-high heat. Add the cubed beef and brown on all sides.
  • Add chopped onions and minced garlic to the pot. Sauté until the onions are translucent.
  • Stir in tomato paste, ensuring it coats the meat and vegetables evenly.
  • Pour in the beef broth and red wine (if using). Add bay leaves and dried thyme. Bring the mixture to a gentle boil.
  • Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, allowing the beef to become tender.
  • Add sliced carrots, parsnips, diced potatoes, turnip, rutabaga, celery, and mushrooms to the pot. Season with salt and black pepper to taste.
  • Continue simmering for an additional 30-45 minutes or until the root vegetables are fork-tender.
  • Once the stew is cooked to perfection, discard the bay leaves.
