Ingredients

  • 1 quart fresh strawberries hulled and sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 2/3 cup milk
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Prepare the Strawberries: In a mixing bowl, combine the sliced strawberries with 1/4 cup of granulated sugar. Toss gently to coat the strawberries, then set aside to macerate while you prepare the shortcakes.
  • Make the Shortcakes: Preheat your oven to 425°F (220°C). In a large mixing bowl, whisk together the flour, 1/4 cup of granulated sugar, baking powder, and salt. Add the cold cubed butter to the flour mixture, and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs. Gradually add the milk, stirring until the dough just comes together.
  • Shape and Bake the Shortcakes: Turn the dough out onto a lightly floured surface and gently pat it into a circle about 1-inch thick.
